Every Pizzaiolo pizza starts with our signature dough, which undergoes a 48-hour slow fermentation process. This patience gives our crust its distinctive light, airy texture and complex flavor profile that can't be rushed or replicated. We use only the finest "00" flour imported directly from Naples, the birthplace of pizza.
Our sauce is made from San Marzano tomatoes grown in the volcanic soil near Mount Vesuvius, known for their sweet flavor and low acidity. Each batch is prepared fresh daily using a closely guarded family recipe that balances the natural sweetness of the tomatoes with a blend of Mediterranean herbs.
We're proud to hold certification from the Associazione Verace Pizza Napoletana, which recognizes pizzerias that adhere to the traditional methods of Neapolitan pizza making. All our ingredients are ethically sourced, with priority given to local Canadian farmers for seasonal toppings whenever possible.
