From Italy to Canada: A Pizza Journey

Pizzaiolo was born from a simple but passionate vision: to bring authentic Italian pizza to Canada without compromise. Our founder, Marco Rossi, grew up in Naples, the birthplace of pizza, where he learned the art of pizza-making from his grandfather, a renowned pizzaiolo (pizza maker) in the local community.

After moving to Canada in 2005, Marco was disappointed by the lack of truly authentic Italian pizza. He missed the thin, perfectly charred crust, the simple but high-quality ingredients, and the careful balance of flavors that defined the pizzas of his childhood. In 2008, he decided to change that by opening the first Pizzaiolo location in Toronto.

From day one, our commitment has been unwavering: use traditional methods, import the finest Italian ingredients when necessary, source locally when possible, and never take shortcuts. Our dough undergoes a 48-hour fermentation process, our tomatoes come from San Marzano, and our recipes stay true to Italian tradition while occasionally incorporating Canadian inspirations.

Today, Pizzaiolo has grown to over 30 locations across Canada, but we remain as dedicated to quality and authenticity as we were on our first day. Each pizza we serve is a piece of Italian heritage, delivered with Canadian hospitality.

Founder & CEO

Sofia established Pizzaiolo in 2008 with a vision to bring authentic Italian pizza to Canada. With over 25 years of culinary experience, she oversees all aspects of the business while staying true to her Italian roots.

Head Chef

Trained in Naples, Isabella brings 15 years of expertise in authentic Italian cuisine. She develops our recipes, sources ingredients, and ensures every pizza meets our high standards of taste and quality.

Marco ensures the smooth operation of all 30 Pizzaiolo locations across Canada. With a background in hospitality management, he's responsible for maintaining consistent quality and service at every restaurant.

Our dough undergoes a 48-hour fermentation process, and our pizzas are baked in traditional wood-fired ovens at 900°F.
